The Theopolis Vineyards Petite Sirah was fermented 34% whole cluster in five ton, open top stainless steel fermenters. The Syrah, Mourvèdre, and Grenache were fermented whole berry in .75 ton T-Bins. This blend was aged in 6% new French oak barrels for 10 months.
