Vinification
The Syrah and Mourvèdre for this vintage of the Cuvée Cerise were co-fermented in a stainless steel open top fermenter, manually punched down, and aged for 12 months in 15% new French Oak barrels. The Petite Sirah for this vintage of the Cuvée Cerise was fermented 35% whole cluster in a stainless steel open top fermenter, manually punched down, and aged for 12 months in neutral French Oak.
